Making Herbal Vinegars and Oils

The home grown herbs can be used to season herbal oils and vinegars. These flavored oils and vinegars can be used to give the marinades and salad dressings a new kind of taste, different from the conventional ones. For making herb vinegar the supplies required are sterilized jar with lid and home grown herbs and vinegar of your own choice. The results would be better if the vinegar is matched with the herb. Delicately flavored herbs would go well with white wine vinegar whereas a strong flavored herb like rosemary would go well with red vinegar or regular white vinegar. When using fresh herbs it should be kept in mind that they are harvested in the early morning as the essential oils are the strongest at that point of time. They should then be washed gently and dried thoroughly. After drying these should then be cut into smaller pieces and then put in the jar. The vinegar chosen should then be poured on them so that they are covered completely. The lid of the sterilized jar should be fastened tightly and should be left to stand for about 6 weeks. 

After 6 weeks the herbs have to be strained out and the vinegar be put in a clean sterilized container. This vinegar is now ready to be used for cooking or for salad dressing. For making herb oil the supplies required are Sterilized jar, oil and home grown organic herbs. Start by heating the oil gently in a double boiler and taking precaution of not heating the oil too much as this will change the quality and taste. While boiling, add the herbs you want to use. Now let the oil and the herb mixture cool and leave it in the refrigerator for about a week. Strain out the herbs and add Vitamin E oil and pour the flavored oil in the sterilized jar and tighten the lid. Your perfect oil is ready for use.
